Under-extracted Features
Beige, very pale cream.
Low cream consistency, with large bubbles.
Cream not very persistent, fading (less than 1 min.)
Little body, watery, with little taste which
does not linger and little aroma.
Possible causes:
Dose less than 6 grams
Water temperature less than 88°c
Water pressure more than 9 bar
Coarser grinding
Excessively light pressing
Less than 25 cc in cup
Less than 20 sec. pouring
